Lemon Chile Kale Chips
















Ingredients

  • 1 bag of cut kale
  • Olive oil spray such as Pam
  • Freshly grated parmesan cheese
  • 1 lemon, zested
  • Cayenne pepper
  • Salt
  • Pepper

Directions

Pre-heat oven to 375 degrees. Arrange kale onto a baking sheet with edges in a single layer. Remove any thick pieces of stem between the leaves. This ensures that you will end up with nice, crisp kale chips. Lightly spray the kale with olive oil. Sprinkle with lemon zest, parmesan cheese, cayenne pepper, salt, and pepper to taste. Bake kale until crispy - about 10-15 minutes. Enjoy!

2.5” high; 4” diameter. Fits most disposable coffee cups. 
Yarn
Bernat Baby Yarn, Baby Blue, 1 - Super Fine (90% Acrylic, 10% Nylon; 1.75 oz/50 g, 191 yards) 1 ball. 
Needles
US 1 (2.25 mm) DPNs, or size to obtain gauge.

11 sts and 11 rows = 1” in the round, blocked.
Notes
This pattern is worked in the round from the bottom up.
Ribbing pattern: (In the round over an even number of sts) K1, P1. 
Cable pattern: C2F, slip 1 st onto CN, hold in front, K1 st, K1 st from CN. C4F, slip 2 sts onto CN, hold in front, K2 sts, K2 its from CN.  
Pattern instructions
CO 80 stitches. Place stitch marker. Join in the round, being careful not to twist the stitches. Rounds 1-4: *K1, P1. Repeat from * to end of round. 

Round 5: *P1, K2, P1, K4. Repeat from * to end of round. Repeat round 5, 2 times more. 

Cable Pattern: *C2F, P1, K4, P1. Repeat from * to end of round. Repeat round 5, 2 times more.  *K2, P1, C4F, P1. Repeat from * to end of round. Repeat round 5, 2 times more.

Repeat cable pattern until piece measures 2 1/8” from CO edge. Set-up round: *K1, P1. Repeat from * to end of round. Continue ribbing 2 times more. Bind off in ribbing pattern. Weave in ends. Block.

Amazing Beef Brisket Nachos


Ingredients
  • Tortilla chips
  • Canned refried beans
  • Black olives
  • Pickled jalapeƱos
  • Shredded Monterey Jack cheese
  • Shredded Medium Cheddar cheese
  • Leftover beef brisket, shredded
  • Diced avocado
  • Salsa
  • Avocado salsa
  • Sour cream


Directions

Pre-heat oven to 350 degrees. Place a layer of tortilla chips on an oven-proof plate or a baking sheet. Add refried beans, black olives, pickled jalapeƱos, Monterey Jack cheese, Cheddar cheese, and shredded leftover beef brisket. Bake for 5 minutes, or until cheese has melted and nachos are warm. Remove from oven, and top with diced avocado, salsa, avocado salsa, and sour cream. Enjoy!
